How people were able to focus with old film cameras and manual lenses?

Howdy y'all!

I do some video, not much photography. I own Canon 5DII but because lenses are expensive, I have few old Nikkor AIS lenses. Great for video, long focus ring, very fast lenses, great image. I do some photos with them, but it is so hard without autofocus.

How were people doing such amazing photos without autofocus? They couldn't messed up, because of film. Not, I can take 100000 RAW pictures and use only one. I would want to learn how to use my manual lenses for photography with 5DII. Any suggestions?
